Safflower is exactly the kind of plant you will fall in love with during your very first harvest. Although its flowers resemble a prickly thistle, its stems are beautifully straight and woody. This makes it excellent to work with, and it lasts a really long time in a vase. In arrangements, you can use it in several ways. It looks great even as an unopened bud, acting as a neutral green filler. Once it blooms into rich colors, it will brighten up every bouquet. It is also a fantastic plant for drying. Just hang it upside down after harvesting in a dry, well-ventilated place out of direct sunlight. You can easily grow it from seeds in full sun.
